Broccoli sprouts- are high in sulfuraphane, which is a powerful phytochemical that is being researched for their removal of carcinogens, prevention of cancer cell production, destruction of breast cancer cells, and tumor reduction. Broccoli sprouts purportedly are 50 times more powerful than the mature counterparts and they provide high quality digestive enzymes.

Carrots- are high in beta carotene, a precursor to Vitamin A, which promotes healthy skin and eyes. They are high in potassium and is helpful in maintaining healthy blood pressure.

Whole wheat pita- High in fiber and minerals.

Hummus-  The main ingredient is chickpeas. Chickpeas are high in B vitamins, which is important to people who consume primarily a vegan diet. Chickpeas are also high in folate, phosphorus and iron.

The making of the sandwich:

Slice one round pita in half. Open gently and place in a toaster or toaster oven to warm up the bread. Do not keep it in too long or the bread will become brittle and not be able to support your veggies.

Spread hummus on the sides of the bread and insert your carrots, and sprouts. You can be creative and add some slices of avocados.  Summertime tomatoes really gives this sandwich a huge kick. Be creative and try different types of sprout. Sprouts are nothing but pure crunchy nutrition. Enjoy!
